I woke up and now what...?

It feels like all the days emerge into one. I'm sitting in front of my laptop and thinking it's Sunday evening, but actually, it's Monday already. It's so funny how I cannot even remember how Monday feels like. It's officially my 6th week off from work, as I was on holiday beginning of March, then self-isolating and then the lockdown started. I took it very easily last week and did not do much, I mean what you can do at this point? I started watching a few new tv series, finished off Tiger King ( like what the actual fuck?), started Ozark and been obsessed with Project Runway recently, currently watching the last season. So I have not been very productive because I really feel this lockdown is starting to get to me, I hope I'm not the only one feeling like this.
I really miss seeing my friends, going out for a cup of coffee and even work, to be honest. I think we all are in the same boat, cannot wait for things to go back to normal. But this time off has really given me the chance to chill out, I think the first time in 4 years I don't feel tired and that's a big thing for me :D (lol).
Been really on a cooking/ baking mode, searching different recipes to do and just playing around with food as we cannot eat out currently, and I've been really enjoying it. I downloaded the app called "Tasty" and it gives you hundreds of things to do and shows you video clips first how to make it which is super convenient. The most important thing is to find things that bring you joy and happiness. Even putting a bit of make-up on and getting out of the joggers is a small thing but can make such a difference how you feel.
I've also trying to for a long walk every day just to get my daily steps in and it really lifts my mood. I'm not one of those people who can sit and watch TV all day, I'm not able to focus that long :D.
Also, today I will try and clean the windows, it's a long project but I have nothing better to do, really feeling like a full-time housewife.
I will share the cookie recipe and the banana loaf recipe I've been doing non-stop this quarantine, these are two easiest and non-timeconsuming things you can do under 15 min and they are delicious. I also add loads of nuts and chocolate chunks to my banana loaf as well and for the cookies, I add extra white chocolate.

ELLE DARBY COOKIES

  • 100g butter
  • 50g of caster sugar
  • 60g of brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla essence/extract 
  • 125g of plain flour
  • 1/2 teaspoon bicarbonate of soda
  • A big bar of chocolate (at least 200g, I used the dairy milk one)
  • Mix together both sugars + butter and mix until fluffy, then add egg + vanilla essence 
  • In separate bowl mix flour and soda
  • Now add the dry ingredients to the sugar egg-butter mix
  • Prepare the chocolate (chop in small pcs)
  • Add the chocolate to the rest of the mix
  • Now prepare the baking tray and turn the oven to 180 degrees
  • Bake for 8-12 minutes, depends on how doughy you want them( I baked 10min)
  • PS! This mix makes 4-5 cookies
